What if you&#8217;ll put together your 2010 Green Pharmacy of safe and useful herbs that can be used to treat different ailments and conditions during New Year.</p>
<ol>
<li><strong> Raspberries</strong> are my favorite berries, a good source of vitamin C. I love to eat them fresh, to put into my hot tea. When one of the members of my family has cold or flu  &#8211;1-2  teaspoons of raspberry preserve in a cup of tea helps to get rid of fever  and magically promotes fast recovery.</li>
<li><strong>Nettle, </strong>a blood tonic and cleanser is diuretic, tonic , and astrigent. Nettles are  a good source of iron, and especially good for people with anemia. This herb can be drunk as an infusion. Some people cook nettles like spinach. Experts don&#8217;t recommend to inhale the nettles&#8217; steam because it contains the formic acid that gives this herb its sting burning your skin. The nettles are also thought to be good for the scalp and hair.</li>
<li><strong>Chamomile</strong> is a favorite calming and relaxing  herb for adults and for children&#8217;s complaints.  Make hot chamomile tea to help cure sleeplessness and soothe  digestion.   Chamomile lotion or cream is useful for inflammatory skin conditions, and chamomile shampoo is beneficial for healthy hair<span id="more-4324"></span></li>
<li><strong>Peppermint</strong> is a well known refreshing and cleansing herb. Hot peppermint tea is useful for headaches provoked by indigestion,  for nausea, flatulence , colic, and period pains and discomfort. Wet a cotton ball in peppermint tea and treat hot and itch skin conditions by rubbing an affected spot.</li>
<li><strong>Rosemary, </strong>a tonic and inflammatory, aromatic herb can be applied to the scalp for danruff.  Make hot rosemary tea/infusion and treat your headaches, colds and colic. If you feel down and in low spirits, rosemary tea is your savior.</li>
<li><strong>Elderflower</strong> tea is a great aid if taken at bedtime to treat fever because it helps the body to sweat and release harmful toxins. It can be given safely to children in winter months sick with colds and flu.   Experts recommend to drink  elderflower tea three times a day for three months before the season to help prevent hayfever.</li>
<li><strong>Calendula</strong> is another one of my favorite flowers. It has names &#8216;marigold&#8217;, or &#8216;pot marigold.&#8217; This amazing plant is a  good healer for inflamed skin, sores, bruises, and fungal infections. Calendula is ysed widely in preparations of a wash, ticture or ointments. Tea infusion can be given safely to children to treat fevers, swollen glands and tonsillitis.</li>
<li><strong>Aloe Vera</strong> is the most famous plant that can be taken internally as digestive and cleansing aid. Take the gel from the leaf of the young aloe plant and you have a natural, herbal medicine for burns, sunburn, eczema, dermatitis, skin rashes, and bites. Aloe gel is very helpful in treating athlete&#8217;s foot, too.</li>
<li><strong>Garlic</strong>  is one of the most powerful anticeptics.  It prevents high blood pressure; protects the arteries and heart, and improves the circulation. Eating fresh garlic every day helps to boost your immune system and prevent colds and coughs. Garlic is an effective healer of asthma, bronchitis , sinusitis and hayfever.</li>
<li><strong>Echinacea</strong> became a very popular herb in the last several years thanks  to its ability to boost immune system. Echinacea also helps to treat infections of the upper respiratory tract and skin rashes and other skin diseases.</li>
<li><strong>Dandelion</strong> is another my favorite plant. I use fresh dandelion leaves in salads and sandwiches because they contain large amounts of vitamin A.  This great plant known as weed is tonic and diuretic, and  successfully boosts the action of our life-important organs&#8211;the kidneys and liver.</li>
<li><strong>Marshmallow</strong> is known  to soothe the lining of respiratory, digestive, and urinary tracts. It helps to treat bronchitis, gastritis, and systitis.<strong>   </strong>If you feel your skin is dry, drink a cup of hot marshmallow tea/infusion to alleviate and bring it  to a healthy glow.</li>
<li> <strong>Lemon Balm, </strong>also known as melissa or bee balm, has a delicate fragrance and is mild but effective in treating colds and flu, feverish conditions. It encourages perspiration, gently sedative, and it&#8217;s pleasant to taste as tea/infusion, so the best to drink it at bedtime.</li>
<li><strong>St. John&#8217;s Wort</strong>, the sunny and powerful herb that has been used for centuries to heal wounds. Taken internally as a tea, it helps in menopause and eliminates feelings of anxiety.</li>
<li><strong>Thyme</strong> is an antiseptic and expectorant. It is useful in the treatment of coughs and bronchial infections because it brings up phlegm. Naturopaths also prescribe this herb for infections of the urinary tract. It is used widely as a pleasant spice for many meals.</li>
<li><strong>Fennel</strong> is good for fresh salads as a whole, but as a tea made from seeds can treat flatulence and colic. Breasfeeding mothers can  drink this tea to promote theflow of milk and prevent colic in babies. If you have sore eyes, you can use fennel tea as an eyewash.</li>
<li><strong>Comfrey</strong> is well known herb for its soothing and healing properties. It is widely used not only to treat wounds, bruises, painful joints, but it helps to treat gastric complaints, and such skin disorders as eczema and psoriasis.</li>
<li><strong>Slippery Elm</strong>  has been used for a long time by the Native Americans. It is useful for gastric complaints and in the treatment of duodenal ulcers. Slippery Elm has an ability to soothe the mucous membrane lining of the digestive tract, so why it is very important herb in herbal medicine.</li>
<li><strong>Feverfew</strong> is very popular in the treatment of headaches and migraines. Some studies are being done to test its effectiveness in treating rheumatism. Fresh leaves of feverfew can be layered into a sandwich to make them more tasteful.</li>
<li><strong>Cinnamon</strong> is a star of spices, but was used for centuries as a ready remedy for diarrhea, vomiting and nausea. As a warming remedy, it helps to treat colds, coughs, fevers, and even rheumatism. </li>

<p>Now is cold everywhere. Ugh! Definitely we need not only warm cloth, but a hot cup of vitamin-rich tea to heal and rejuvenate our body and mind. What can be better and healthier than sipping hot, natural, herbal tea several times a day? </p>
<p>It is very important to load your body with vitamins, especially now, in winter time. To take vitamins hidden in capsules in powder form is boring. Do it by drinking hot teas. It&#8217;s really joyful and exciting. This centuries old tradition became a pleasant ceremony and entertainment in many countries around the world. You can do it alone or while socializing with your friends or business associates.  </p>
<p>Here are several herbal compositions widely used in Russia and other European countries that will help you strengthen and clean the immune and respiratory systems from toxins so viruses and bacteria will not find a beneficial envoronment in which to &#8220;blossom&#8221; into colds, flu, cough, sore throat and other diseases.</p>
<p><strong>Method of preparation </strong>is the same for all three compositions:</p>
<blockquote><p>Combine in a pot or a glass jar two tablespoons of the mixed herbs with two cups boiling water. Steep 10 minutes. Drink one to two cups hot herbal tea daily. You can add one teaspoon organic raw honey.</p>
<p>1. Four and a half tablespoons rose hips<br />
   One tablespoon black currant<br />
   Four tablespoons nettle leaves<br />
   One and a half tablespoons cranberries</p>
<p>2. Three tablespoons rose hips<br />
    One tablespoon black currant<br />
    Three tablespoons minced carrot</p>
<p>3. One tablespoon rose hips<br />
    One tablespoon blueberries<br />
    One tablespoon nettle leaves</p>
<p>Tea parties were a Friday tradition and always a perfect get-together at our home. We would meet as usual in our garden or family room when it was cold. Tea was considered to be an essential part of <em>l&#8217;art de vivre</em>. We sat down to tea many times&#8211;the same party around the same table on our patio or inside the house. In summer time we enjoyed the view of Grandma&#8217;s multicolored garden with in array of flowers that greeted us with sweet and pungent aromas while the strains of Tchaikovsky&#8217;s &#8220;Waltz of the Flowers&#8221; filled the air. In winter time we listened to Vivaldi&#8217;s &#8220;The Seasons&#8221; while sipping the delicious, spicy, hot steaming cuppa of tea to cure our body and mind, cold, cough, sore throat or relieve a pain or stress.</p></blockquote>

Substitute one of them, strawberry yogurt (it has artificial color), with kefir, an ancient cultured, enzyme-rich beverage filled with friendly micro-organisms that help balance your &#8220;inner ecosystem&#8221; to maintain optimal health and joyful living.</p>
<p>Are you familiar with this amazing, fermented milk drink that originated in the Caucasus region? If you did not try it yet, you should. This must-have food is usually prepared by combining cow, goat, or sheep&#8217;s milk with kefir grains. The word &#8216;kefir&#8217; comes from Persian words <em>kef</em> (foam) and <em>shir</em>(milk), but in Turkish the same word means &#8220;feel good.&#8221; </p>
<p>Centuries ago kefir became an every day breakfast, lunch and dinner drink in Russia, Ukraine, Belarus, Romania, Hingary, Poland, Norway, Sweden, Finland, and Baltic States of Estonia, Latvia and Lithuania. You can drink it plain, as many Europeans do, but if you find this taste too sour, add organic blueberries, bananas, strawberry, honey, agave nectar or maple syrup. Mix organic fruits in a blender and make a delicious, homemade smoothie.<br />

I never eat any yogurt because of all food additives harmful to the body. I love kefir, a creamy, cultured, nutritious product with amazing health properties. It is similar to a drinking-style, cultured buttermilk and yogurt, but much better with its tart and refreshing flavor. We can still enjoy this most generous gift of Mother Nature. As we all know, pumpkin has become famous in the form of the pumpkin pie, but there is so much more we can do with this squash that is harvested in the coolness of the fall. </p>
<p>Fresh from the field, plump and friendly pumpkins can find smart use in our kitchens till New Year&#8217;s Day. Please don&#8217;t say that you can have your pumpkin pie in May, August or February. It&#8217;ll be a pie made with Libby&#8217;s canned pumpkins. You cannot compare it in taste with a pie baked with fresh pumpkins.</p>
<p>So many delicious meals can be created with fresh squashes. In summer time zucchini are my favorites. They are the most versatile and most loved of all squashes. These vegetables are easy to cook. They are tender, have delicate flavor, and are available all year through in stores. The winter squashes, such as acorn squash, kahocha, and onion squash are available only in season.  </p>
<p>So, if you love zucchini the most, buy only locally grown that are sold by farmers from mid to late summer. In summer you can make zuchini pancakes with fresh dill, stuffed zucchini with walnuts, feta cheese and basil, and zucchini with walnuts, fresh parsley and cheese gratin&#8211;all from fresh vegetables according to the season. Now don&#8217;t miss an opportunity to cook with fresh pumpkins and other winter squashes.</p>

<p>The winter is upon us, and nutritious pumpkins and other winter squashes are the vegetables of a day.  Pumpkins are  the most popular of the winter squashes. These pleasing vegetables are bright in color, huge in size, smooth in skin and sweet in taste. As sources say, pumpkins are originated in America and found thousands of devoted homes and creative cooks there. However, other nations also adapted pumpkins from a culinary point of view, and came up with different deliciouis and healthy meals.</p>
<p>I grew up in a family in southeastern Europe that passed from generation to generation basic principles of eating the healthy way. Fresh vegetables were very important part in our menu, including <em>cucurbita, tikva (</em>pumpkins). My grandmother created lots of fabulous appetizers, soups, side dishes and desserts with fresh pumpkins growing in our garden.  </p>
<p>All these meals looked so colorful, thanks to the pumpkin&#8217;s bright and happy orange  color, which gave me a feeling of a special food holiday every time I came to the dinner table and there was a dish with this vegetable. What is better than the simple pleasure to make and enjoy home-cooked, natural  foods with the whole family around the large table? This approach is the most beneficial to our health, and cannot be compared with going out and eating any restaurant food. </p>
<p>We may have excuses that we don&#8217;t have Grandmas cooking for us, that we live stressful lives  and struggle day by day trying to meet all our commitments. We can complain that we don&#8217;t have a chance to slow down and don&#8217;t have time to give our bodies enough of physical activity. Instead, we &#8217;save&#8221; ourselves with  fast food and expansive medical medicines. Don&#8217;t you realize that all drugs have side-effects, and all foods we take out are highly processed and stripped out of natural ingredients? Is it really a better, happier and healthier lifestyle we dream about?</p>

<p>Here are my family recipes of fresh, appetizing summer salads with health-giving qualities. Each is nutritious,  quick and easy to prepare. These original dishes with Eastern European flair can suit the busy women, Moms, cooks who like to save time, and with a little effort create natural meals for all tastes and occasions.</p>

<p>1 red onion, chopped; <em>Capcicums: </em>1 large red bell pepper, chopped; 1 large orange bell pepper, chopped; 1 large yellow bell pepper, chopped; 2-3 medium size tomatoes, chopped; 2-3 cucumbers, skinned and cut thin,; 1 tablespoon Italian parsley; 1 tablespoon dill; 2 tablespoons cold pressed olive oil, 1 lemon, squeezed, sea salt.</p>
<p>Put all prepared vegetables and herbs in a big glass bowl. Your salad looks colorful and joyful. Serve: 4-6 people. Preparation time: 15 minutes. </p>

<p>Cabbage is the main ingredient in this salad. In our family we gave it a fancy name,<strong> </strong><em>Brassica</em> because it comes from the Latin name <em>Brassica oleracea</em> for cabbage.  This nutritious vegetable was cultivated in the West since at least 400 B.C. Since Dioscorides&#8217; time cabbage was used in salads, as a digestive remedy, a joint tonic, and for fevers and skin problems. Over-indulgent Romans used to eat raw cabbage to prevent drunkenness.</p>
<p>1 lb (500 g) cabbage, chopped; 1 lb (500 g) carrots, peeled; 1 big green Granny Smith apple, chopped; a bunch of fresh green onions, cut small, Italian parsley and dill, sea salt.</p>
<p>Coarsely grate carrots into a bowl, add cabbage, green apple, green onions, parsley and dill. Pour olive-lemon dressing over vegetable and  mix well. Your tasteful, natural medicinal salad is ready to serve 4-6 people. Preparation time: 15 minutes.</p>

<p>Avocado is a vegetable fruit or a New World fruit native to Mexico. It has been known as butter pear because of its consistency, but in Spain it got the name&#8211;alligator pear, maybe because of its knobbly skin reminding an alligator&#8217;s leathery skin. Even it was discovered by Old World explorers long ago, it did not become a popular food in Europe until 1950s. But farmers in California started to grow avocados in the middle of the nineteeth century. The climate there is beneficial to do that, but the main reason to grow these unusual superfoods was in its rather remarkable properties.</p>
<p>The avocado is nutritious fruit, high in protein and carbohydrate, rich in potassium, Vitamin C, B, and E. It is one of the few fruits containing fat in form of oils, particularly vitamin E. It means that the avocado is not only useful as food, but it is good for our hair and skin. These facts were well known to the Aztecs and Incas a thousand years ago.</p>
<p>Avocado is a great product for babies because of its valuable vitamin and protein content. Kids love it, if it&#8217;s prepared right. Here are my recipes:</p>

<p><strong>Baby&#8217;s Green Butter Pear (Avocado) Puree</strong></p>
<ul>
<li>Prepare one perfect avocado. It should be ripe with clean, unblemished skin and without any brown or black patches. Peel the skin. Cut on two halves. Remove the stone. Sprinkle with lemon juice to prevent flesh to discolor once exposed to the air. Then blend green part in a blender. It makes very tender puree that small children love for its creamy texture and pleasant flavor. You can add 1/4 of a teaspoon honey to add aroma of wild flowers to it.</li>
</ul>
<p>I improved Classic Guacamole taste. It is easy and fast, and you have absolutely fabulous, healthy meal for your family or guests.</p>

<li>Put one pack of Mexican Classic Wholly Guacamole in a glass bowl. Add red onion cut small, and one can of Organic Diced Tomatoes and chopped Italian Parsley. Mix all ingredients well. In 10 minutes you have absolutely delicious and juicy appetizer or snack. Avocado can get darker and loose its bright green color. Squeeze 1/2-1 lemon. It will not discolor (into brown) and stay green until you&#8217;ll eat it all. Serve for 4-5 people. The rest keep in fridge.</li>

<p><strong>Gourmet Avocado-Cheese Sandwiches</strong></p>
<p>Eat this delicious guacamole with blue corn chips or with gourmet European cheese. If you don&#8217;t want to eat chips or bread, substitute them  with thin sliced good quality cheese like you see on my photo. No worry that cheese has some saturated fat, you balance it with avocados that are loaded with unsaturated fats. It&#8217;ll make very special gourmet sandwiches that everybody will eat with great pleasure.   </p>

<li><strong>Mama&#8217;s Homemade Guacamole:</strong></li>
</ul>
<p>3 ripe Haas avocados and juice of one lemon, </p>
<p>1/2 red onion cut small  and a bunch of Italian parsley and dill chopped</p>
<p>Slice avocados around lenghtwise. Open and remove a hard seed and scoop out green avocado &#8220;flesh&#8217; into a large bowl. Then mash it. Add lemon juice fast to prevent ozidizing. Add red onion, parsley, dill, and a pinch of organic sea salt. Mix well together until mixture is smooth and creamy.</p>

<p>Wash and cut red, green, yellow or orange bell peppers on 4 slices. Clean from seeds. Then put your Mama&#8217;s homemade guacamole  on the internal side of each slice and you have four colors delicious sandwiches. It can make very fancy and colorful plate for your holiday parties, too.</p>

<blockquote><p>Less and less we breathe in the marvelous natural scents of trees, earth, and snow that bring us health and energy. When I was a little girl, we always had plants, such as eucalyptus, or a branch of a coniferous tree in our home. Near our house grew a proud pine which we knew always gave us energy and oxygen. In our garden Grandma cultivated mint and lavender; the modest, but fragrant chamonile; oregano; and King&#8217;s clover or thyme. She sewed by hand small pretty cotton sachets, which she stuffed with fresh herbs and hung in our closets and on nails throughout our house. They emitted an intense aroma that made us feel as if we had come to change our clothes in a fragrant garden.</p></blockquote>
<p>Now we have a great solution to get close to nature: Stream Garden.  Read my next post about it. You&#8217;ll learn how to start a real, green garden in your home or in your office. You can plant there so many herbs, berries, fruits and vegetables and save lots of money on expensive organics, start eating healthier, and go green with your environment.  Look at these pictures of the garden.
